Custard is a variety of culinary preparations based on milk and cream cooked with or without eggs yolks (egg yolks are used to thicken it. For making custard we also use sugar and cornflour. Depending on the recipe, custard may vary in consistency from pouring sauce to the thick pastry cream.
- 200 ml double cream
- 700 ml whole milk
- 4 large egg yolks
- 3 tbsp corn flour
- 100 g caster sugar
- 1 tsp vanilla essence

- Put the cream and milk into a large pan and gently bring it to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Now, gradually pour the hot milk mixture on the sugar mixture and whisk it continuously.
- Wipe out the saucepan and pour the mixture back into it. Heat gently, stir it with the wooden spoon until custard is thickened, be careful because after some moments the lumps are formed.
- Your custard is ready to be served! You can eat it hot or cold.
